Adrienne’s World-Famous Chocolate Chip Pumpkin Muffins
Preheat oven to 350 degrees. Grease/butter one muffin tin.
In large bowl, combine:
1 ½ c. whole wheat pastry flour
1 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. clove
¼ tsp. allspice
¼ tsp. salt
In second bowl beat 2 eggs. Stir in 1 c. canned pumpkin and 1 stick melted butter.
Add dry ingredients and stir until just moistened. Stir in 1 c. chocolate chips. Spoon into muffin tins and bake 20-25 minutes.
P.S. If you love yourself or the people you’re feeding, you should use Ghirardelli chocolate chips. If you have feelings of apathy, Nestle or Hershey will work. If you’re feeling particularly sinful, it’s fun to put 2 cups of chocolate chips in the recipe.
P.P.S. You can cut the sugar down to half a cup and still have perfectly good muffins. Of course, you’ll ruin the lower-sugar thing if you cut the sugar and then add extra chocolate chips, but, you know, free country and all.

Now I feel bad for requesting the recipe in the middle of your massive deadlines. ; )

If you've never tried this before, you must.
Lay Saltine crackers, salty side down, on a microwavable plate.
Cut slices of sharp cheddar (no low-fat stuff!) and place on top of crackers so no cracker is showing.
Microwave for 1 minute.
Eat all of them in one sitting in front of your favorite TV show, stopping briefly to wipe the grease from your chin (with a dish towel), use fork to get any scrap of melted cheese off of the plate, realize it's the most delicious thing you've ever had and then head to the kitchen to make another plate.

That ranks right up there with the easy taco dip:
layer one brick of cream cheese in a pan
add one can of no beans chili
top with as much cheddar or taco cheese as you want bake or microwave until bubbly
eat with bag of corn chips and only share with people you like who beg correctly.
